The foodservice research group is dedicated to food service and hospitality researches and supports other areas that directly and indirectly affect foodservice operations. The group currently undertaking a variety of research projects such as service quality, organizational behaviours, hospitality branding, image building, service failure and recovery strategies as well as gastronomy and culture in the food service industry.


Members' expertise includes culinology, operational research in foodservice employing both quantitative and qualitative research approaches. In accordance with the UPM role as Research University, the foodservice research group in the near future will have collaborative efforts with foodservice industry and this effort will lead to more pragmatic research activities and useful applications. The research group aims to be a leading proponent of research and technological advancement for the foodservice industry in Malaysia.

DR. MOHHIDIN OTHMAN
Chua Bee Lia is a Master candidate in Food Management at the Department of Food Service and Management under the supervision of Dr. Mohhidin Othman. Her major field of research is exploring servicescape failure and associated recovery strategies in food service establishment by adopting Critical Incident Technique (CIT) approach, which aim to discover the intensity of customer reaction and provide a deep understanding of the rationale for certain behaviours. By such, the real servicescape failure phenomena and recovery effectiveness could be unearth and fill in the void of the previous research in this regard. She has also involved in culinary tourism research by utilizing Structural Equation Modeling (SEM) approach.

Foo Lee Yen is pursuing her Master degree in Food Management at the Department of Food Service and Management under the supervision of Dr. Mohhidin Othman. Her research interest is on hotels efficiency measurement. The main objective of her research is to examine Malaysian hotels efficiency by applying a framework of non-parametric programming approach – Data Envelopment Analysis (DEA). By using DEA, the best practice hotels and the factors contributing to efficiency of the hotel could be determined.

DR. BOO HUEY CHERN
Faiz Nur Hakim is a Master candidate in Food Management, from the Department of Food Service and Management, under the supervision of Dr Boo Huey Chern. His research focused on the adoption of Halal certification in the Small and medium Industries in Malaysia, which the centre of attention is on the motivation for the company to adopt the certification and also, the barrier that will diminish the intention to adopt Halal certification. The research will help to improve more on the aspect of Halal certification, thus, helping the authorities to further enhance the coordination of the certification.

Ting Lee Hui received her Bachelor degree in Food Studies from University Putra Malaysia in 2007. She is currently pursuing her Master’s degree in Food Service Management at the Department of Food Management and Service under the supervision of Dr. Boo Huey Chern. Her primary research interests include characterizing the service quality dimensions that are of concern in the services industry and developing a service quality instrument that is applicable to the Malaysian services industry. She has also involved in research relate to relationship marketing, such as service failure and recovery, consumers’ justice perceptions and post-recovery satisfaction.

DR. MUHAMMAD SHAHRIM AB. KARIM

Leong Quee Ling is a master candidate majoring in Food Management, who is supervised by Dr M. Shahrim Abd. Karim. The major research that she works on is about marketing Malaysian Food from the tourism perspective. The study will focus on analyzing the brand image of Malaysian food and what are the images that Malaysian would like to project in the tourism industry regarding Malaysian food. Per se, this would helps to enhance the image of Malaysia in the food aspect as well as boosting the country’s tourism industry.

Siti Sumayah Abdul Rashid is a Master candidate in Food Management at the Department of Food Service and Management under the supervision of Dr. Muhammad Shahrim Abdul Karim. Her major field of research is exploring the construct of Malaysian sambal belacan from multiple perspectives. Consumer perception and acceptance studies will be performed. Specifically, series of focus groups will be conducted to determine the characteristics of the product. Open ended and semi structured questions will be developed to analyze consumers’ perceptions of the products, and finally, sensory evaluations will be carried out to determine the product acceptance level.

Mohd Munir Omar is a Master candidate in Food Management at the Department of Food Service and Management under supervision of Dr. Muhammad Shahrim Abdul Karim. His major field research is studying the traditional food especially keropok lekor, which aim to access the consumer current perception of keropok lekor, to innovate keropok lekor through bio-processing, and to perceive the acceptance level of innovated keropok lekor.

Roozbeh Babolian Hendijani is a Master student in Food Marketing at the Department of Food Service and Management under the supervision of Dr. Shahrim Ab. Karim. Specifically his research is about finding the factors affecting to intention to consume dairy products and especially milk among school aged children, because these products are still unfamiliar for Malaysians. His research area is in food marketing and consumer behavior, which its goal is profiling the consumers and finding the motivation towards consumption a product.

Razif Aman is a Master candidate in Food Management at the department of Food Service and Management under supervision of Dr. Muhammad Shahrim Ab. Karim. His major field research is discovering the Portuguese Food as Marketable cuisine which aim to explore on the sustainable food cultural heritage from the aspect of culinary and gastronomy perspective. Besides it is also to seek potential as food tourism attraction.
