The Department of Food Technology was established in March 1st 1982. Since its inception, the department has been at the forefront in providing teaching, research and consultancy services in the field of food processing and food engineering in the country. It is endowed with facilities such as state-of-the-art food processing pilot plant and a well equipped sensory laboratory. The pilot plant is used for teaching research and extension education. It also caters for industrial training and provides a test bed for small and medium scale food industries to scale up their products processing. The academic staff of the department has also engaged in consultancy work for food industry in areas such as process design, product formulation, product development and process optimization. This has enhanced the image of the Department as well as provide the impetus for new research areas. The sensory laboratory has well-equipped facilities for sensory evaluation of food material and measurement of sensory scores is completed by the latest software. This laboratory is mainly used for teaching and research but is also open to food industry to do sensory testing on their products. The department houses experts in fats and oils, fish and meat, convenience and frozen food, beverages, dairy products and probiotics, process development and food rheology. The focus of the department today in not only in food processing and engineering, the Department has also been the pioneer, thus responsible for the development of the foodservice field. The Food Technology Department is responsible for running the Bachelor Science (Food Studies) program as well as assisting the Food Science Department and Management and Food Service with the Bachelor of Food Science & Technology and Bachelor Science (Food Studies) programs by offering courses in food processing and engineering. The department also offers Master and PhD programs in Food Processing. |
